Bananas Foster Tiramisu πβ¨

3 large ripe bananas
1/2 cup dark brown sugar
4 tablespoons unsalted butter
1/4 cup dark rum
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/4 teaspoon salt
8 ounces mascarpone cheese
1 cup heavy cream
1/4 cup powdered sugar
1 teaspoon instant espresso powder
24 ladyfinger cookies
Cocoa powder, for dusting
Sliced bananas and mint leaves, for garnish (optional)

Peel and slice the bananas into rounds. Set aside.
In a large skillet, melt the butter over medium heat. Add the brown sugar, cinnamon, and salt, stirring until the sugar is dissolved.
Add the sliced bananas to the skillet and cook for 2-3 minutes, or until caramelized.
Carefully add the rum to the skillet and ignite with a long lighter. Let the flames die down, then stir the mixture until the flames are extinguished. Remove from heat and stir in the vanilla extract. Allow the mixture to cool completely.
In a mixing bowl, beat together the mascarpone cheese, heavy cream, powdered sugar, and instant espresso powder until smooth and creamy.
Arrange a layer of ladyfinger cookies in the bottom of a 9x13-inch dish. Spoon half of the mascarpone mixture over the cookies and spread it into an even layer.
Spoon half of the bananas foster mixture over the mascarpone layer.
Repeat the layers with the remaining ladyfingers, mascarpone mixture, and bananas foster.
Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld.
Before serving, dust the top of the tiramisu with cocoa powder and garnish with sliced bananas and mint leaves, if desired.
