1 pre-made dairy-free pie crust (store-bought or homemade)
1 (13.5 oz) can full-fat coconut milk
1 cup dairy-free chocolate chips
1/4 cup maple syrup
1 teaspoon vanilla extract
2 tablespoons cornstarch
Pinch of salt
Dairy-free whipped cream, for serving (optional)
Chocolate shavings, for garnish (optional)

In a medium saucepan, combine the coconut milk, dairy-free chocolate chips, maple syrup, vanilla extract, cornstarch, and salt.
Cook over medium heat, stirring constantly, until the chocolate chips are melted and the mixture is smooth and thickened, about 5-7 minutes.
Pour the chocolate mixture into the pre-made dairy-free pie crust and smooth the top with a spatula.
Place the pie in the refrigerator to chill and set for at least 4 hours, or until firm.
Once set, slice and serve the dairy-free chocolate cream pie chilled, optionally topped with dairy-free whipped cream and chocolate shavings.
