110g (1/2 cup) almond flour
200g (1 2/3 cup) powdered sugar
100g (1/3 cup) egg whites (about 3 large eggs), room temperature
50g (1/4 cup) granulated sugar
Food coloring (optional)
100g (3.5 oz) chocolate ganache or your favorite filling

Line two baking sheets with parchment paper and set aside. Prepare a piping bag with a round tip.
In a food processor, pulse almond flour and powdered sugar together until fine. Sift the mixture into a large mixing bowl and set aside.
In a separate mixing bowl, beat egg whites with an electric mixer until foamy. Gradually add granulated sugar while continuing to beat until stiff, glossy peaks form. Add food coloring, if desired.
Gently fold the almond flour mixture into the egg whites until just combined, being careful not to overmix.
Transfer the batter to the prepared piping bag and pipe small rounds onto the prepared baking sheets, leaving space between each macaron.
Tap the baking sheets gently on the counter to release any air bubbles, then let the macarons sit at room temperature for 30-60 minutes, or until a skin forms on the surface.
Preheat the oven to 150Β°C (300Β°F). Bake the macarons for 12-15 minutes, or until they are set but not browned.
Remove from the oven and let the macarons cool completely on the baking sheets before carefully removing them.
