No-Bake Mint Aero Cheesecake π«π

300g digestive biscuits
150g unsalted butter, melted
300g cream cheese, softened
100g icing sugar
300ml double cream
200g mint Aero chocolate bars, chopped
Green food coloring (optional)
Mint leaves and extra Aero chocolate for decoration

Crush the digestive biscuits in a food processor or place them in a plastic bag and crush with a rolling pin until fine crumbs form.
Pour the melted butter over the biscuit crumbs and mix until well combined. Press the mixture into the base of a 20cm springform cake tin, using the back of a spoon to smooth it out. Chill in the fridge for at least 30 minutes to set.
In a large mixing bowl, beat the cream cheese and icing sugar together until smooth and creamy.
In a separate bowl, whip the double cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined.
Add the chopped mint Aero chocolate bars to the mixture and fold in gently. If desired, add a few drops of green food coloring to enhance the minty color.
Pour the cheesecake mixture over the chilled biscuit base and smooth the top with a spatula. Chill in the fridge for at least 4 hours, or until set.
Once set, decorate the cheesecake with extra mint Aero chocolate bars and fresh mint leaves before serving.
