Chocolate Cookie Dough Stuffed Cupcakes π«π§

For the chocolate cupcakes:
1 and 1/2 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup water
1/2 cup vegetable oil
1 tablespoon white vinegar
1 teaspoon vanilla extract
For the cookie dough filling:
1/2 cup unsalted butter, softened
1/2 cup brown sugar
1/4 cup granulated sugar
2 tablespoons milk
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup mini chocolate chips
For the chocolate ganache:
1 cup semi-sweet chocolate chips
1/2 cup heavy cream

Preheat the oven to 350Β°F (175Β°C). Line a muffin tin with cupcake liners.
In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking soda, and salt for the cupcakes.
Add the water, vegetable oil, vinegar, and vanilla extract to the dry ingredients. Mix until smooth and well combined.
Fill each cupcake liner two-thirds full with the batter. Set aside.
In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy for the cookie dough filling.
Add the milk and vanilla extract to the butter-sugar mixture and mix until smooth.
Gradually add the flour and mix until fully incorporated. Fold in the mini chocolate chips.
Roll the cookie dough into small balls and place one ball into the center of each cupcake batter-filled liner.
Bake for 18-20 minutes, or until a toothpick inserted into the cupcake (not the cookie dough) comes out clean.
Allow the cupcakes to cool completely in the pan before removing.
Once cooled, make the chocolate ganache by heating the heavy cream until it begins to simmer. Pour the hot cream over the chocolate chips and let sit for 1-2 minutes. Stir until smooth.
Dip the tops of the cupcakes into the chocolate ganache and let set before serving.
