πIngredients:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 2 cups whipped cream
- 2 cups canned crushed pineapple, drained
- 1 cup sweetened shredded coconut
- 1 cup chopped pecans
- 1 teaspoon vanilla extract
πDirections:
- In a mixing bowl, combine graham cracker crumbs and 1/2 cup melted butter. Press the mixture into the bottom of a 9x13-inch baking dish to create the crust. Place it in the refrigerator to set while preparing the filling.
- In a separate bowl, cream together 1/2 cup softened butter and powdered sugar until light and fluffy.
- Spread the butter and sugar mixture evenly over the chilled crust.
- In another bowl, whip the cream until stiff peaks form. Gently fold in the crushed pineapple, shredded coconut, chopped pecans, and vanilla extract.
- Spread the pineapple and cream mixture over the butter and sugar layer.
- Refrigerate for at least 4 hours or until set.
- Before serving, garnish with additional shredded coconut and chopped pecans if desired.
