STRAWBERRY CHEESECAKE VATRUSHKA BUNS ππ

Ingredients:
- 200g strawberries, hulled and diced
- 1 tbsp granulated sugar
- 250g cottage cheese (tvorog or quark)
- 1 egg
- 50g unsalted butter, melted
- 100ml milk
- 50g granulated sugar
- 300g all-purpose flour
- 1 1/2 tsp baking powder
- Pinch of salt
- Confectioners' sugar, for dusting
Directions:
- Preheat the oven to 180Β°C (350Β°F). Line a baking sheet with parchment paper.
- In a bowl, mix the diced strawberries with 1 tablespoon of granulated sugar and set aside.
- In another bowl, combine the cottage cheese, egg, melted butter, milk, and 50g of granulated sugar until smooth.
- In a separate large bowl, sift together the flour, baking powder, and salt.
- Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms.
- Divide the dough into 12 equal portions and shape each portion into a ball.
- Flatten each ball into a disk and place a spoonful of the cottage cheese mixture and a spoonful of the strawberries in the center.
- Fold the edges of the dough over the filling, pinching to seal.
- Place the filled buns on the prepared baking sheet and bake for 20-25 minutes, or until golden brown.
- Remove from the oven and let cool slightly before dusting with confectioners' sugar.
