Boston Cream Pie Fudge 🍫

Ingredients
- 2 cups granulated sugar
- 3/4 cup unsalted butter
- 3/4 cup heavy cream
- 1/4 cup light corn syrup
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup white chocolate chips
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup cornstarch
- 1/4 cup cold water
Directions
- Line an 8x8 inch baking dish with parchment paper, leaving an overhang on the sides for easy removal later.
- In a large saucepan over medium heat, combine granulated sugar, unsalted butter, heavy cream, light corn syrup, and salt. Stir constantly until the mixture comes to a boil.
- Once boiling, insert a candy thermometer and continue boiling, without stirring, until the mixture reaches 234°F (soft-ball stage).
- Remove from heat and stir in vanilla extract. Let cool for 5 minutes.
- Meanwhile, in a microwave-safe bowl, melt white chocolate chips and semi-sweet chocolate chips together in 30-second intervals, stirring after each, until smooth.
- Pour the melted chocolate mixture into the saucepan with the sugar mixture. Stir until well combined.
- In a small bowl, mix cornstarch and cold water until smooth. Slowly pour the cornstarch mixture into the fudge mixture, stirring continuously.
- Pour the fudge into the prepared baking dish and spread it into an even layer. Let it cool completely at room temperature for about 2 hours, or until set.
- Once set, lift the fudge out of the pan using the parchment paper overhang and transfer it to a cutting board. Cut into squares and serve.
