Ingredients:
- 1 cup whole milk
- 1 tablespoon unflavored gelatin
- 3 cups heavy cream
- 1/2 cup granulated sugar
- 1 vanilla bean, split and scraped
- 1 pound fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar
- Fresh mint leaves, for garnish
Directions:
- Pour the whole milk into a small bowl and sprinkle the gelatin over it. Let it sit for 5 minutes to soften.
- In a medium saucepan, combine the heavy cream, sugar, and vanilla bean seeds and pod. Heat over medium heat until the mixture starts to steam, but do not let it boil.
- Remove the saucepan from the heat and whisk in the softened gelatin mixture until completely dissolved.
- Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl, discarding the vanilla bean pod.
- Divide the mixture evenly among 6-8 ramekins or glasses. Cover and refrigerate for at least 4 hours, or until set.
- In a separate bowl, toss the sliced strawberries with granulated sugar. Let them macerate at room temperature for about 30 minutes, until juicy.
- Before serving, spoon the macerated strawberries over the chilled panna cotta. Garnish with fresh mint leaves, if desired.
