Lemon Cheesecake dessert ππ
Ingredients
For the crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
For the filling:
- 4 (8-ounce) packages cream cheese, softened at room temperature
- 1 cup granulated sugar
- 1 cup sour cream
- 1/4 cup all-purpose flour
- 4 large eggs
- Zest of 2 lemons
- Juice of 2 lemons (about 1/4 cup)
For the topping:
- 1 cup sour cream
- 2 tablespoons powdered sugar
- Lemon slices for garnish
- Mint leaves for garnish
- Additional powdered sugar for dusting
Instructions
- Preheat the oven to 325Β°F (163Β°C).
- In a mixing bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and set aside to cool.
- In a large bowl, beat the softened cream cheese until smooth. Gradually add 1 cup granulated sugar and beat until combined. Mix in the sour cream and flour, then add the eggs one at a time, mixing just enough to incorporate after each addition. Stir in the lemon zest and lemon juice.
- Pour the filling into the cooled crust and smooth the top with a spatula. Place the springform pan on a high-sided baking sheet to catch any potential drips.
- Bake the cheesecake for about 1 hour, or until the edges are set and the center is slightly jiggly but not liquid. Turn off the oven and leave the door closed, letting the cheesecake cool inside for about 1 hour to prevent cracking.
- After cooling, remove the cheesecake from the oven and run a knife around the edge of the pan to loosen it. Chill the cheesecake in the refrigerator for at least 4 hours or overnight.
- For the topping, mix 1 cup sour cream with 2 tablespoons powdered sugar until smooth. Spread this mixture over the top of the chilled cheesecake.
- Garnish the cheesecake with lemon slices, mint leaves, and a dusting of powdered sugar before serving.
