For the crust:
1 1/4 cups all-purpose flour
1/2 teaspoon salt
1/2 cup unsalted butter, cold and cut into small pieces
2-4 tablespoons ice water
For the filling:
1/2 cup unsalted butter, melted
3/4 cup granulated sugar
1 tablespoon cornmeal
1/4 teaspoon salt
1/2 teaspoon vanilla extract
3/4 cup honey
3 large eggs
1/2 cup heavy cream
For topping:
Sea salt flakes
Whipped cream (optional)

For the crust: In a food processor, combine flour and salt. Add cold butter pieces and pulse until mixture resembles coarse crumbs. Add ice water, 1 tablespoon at a time, until dough comes together.
Shape dough into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
Preheat oven to 350°F (175°C). Roll out chilled dough on a floured surface to fit a 9-inch pie dish. Transfer dough to pie dish and trim excess. Crimp edges as desired.
For the filling: In a large bowl, whisk together melted butter, granulated sugar, cornmeal, salt, and vanilla extract. Add honey and eggs, one at a time, whisking until smooth. Stir in heavy cream.
Pour filling into prepared pie crust. Place pie on a baking sheet and bake for 45-50 minutes, or until filling is set but still slightly jiggly in the center.
Remove pie from oven and sprinkle sea salt flakes over the top while still warm. Let cool completely before slicing.
Serve slices of salted honey pie with whipped cream, if desired.
