********Ingredients********
2 cups heavy cream
1/4 cup granulated sugar
2 teaspoons powdered gelatin
2 tablespoons cold water
1/4 cup strong brewed coffee, cooled
2 tablespoons unsweetened cocoa powder
1 teaspoon vanilla extract
1 cup mascarpone cheese
Chocolate shavings or cocoa powder, for garnish (optional)
********Directions********
In a saucepan, heat the heavy cream and sugar over medium heat, stirring constantly until the sugar is dissolved. Remove from heat and set aside.
In a small bowl, sprinkle the gelatin over the cold water and let it soften for about 5 minutes.
Stir the softened gelatin mixture into the warm cream until completely dissolved.
Divide the mixture in half. To one half, add the cooled brewed coffee and cocoa powder. Stir until well combined.
Pour the coffee-flavored mixture into serving glasses, filling each glass about halfway.
Chill in the refrigerator for about 30 minutes, or until set but not firm.
Meanwhile, whisk the mascarpone cheese and vanilla extract in a bowl until smooth.
Gently spoon the mascarpone cream over the set coffee layer in the glasses, dividing it evenly.
Return the glasses to the refrigerator and chill for another 2-3 hours, or until the panna cotta is fully set.
Before serving, garnish with chocolate shavings or a dusting of cocoa powder if desired.
