Scones with Blackberry Whipped Cream dessert ๐Ÿ˜‹

Prep Time: 20 minutes | Cooking Time: 15-18 minutes | Total Time: 35-38 minutes
Kcal: 220 kcal | Servings: 8 servings

_____Ingredients:_____
2 cups all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, cold and cubed
1/2 cup milk
1 large egg
1 teaspoon vanilla extract
1 cup fresh blackberries
1 cup heavy cream
2 tablespoons powdered sugar
1 teaspoon lemon zest

_____Directions:_____
Preheat the oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
Add the cold cubed butter to the dry ingredients and use a pastry cutter or fork to cut the butter into the flour mixture until it resembles coarse crumbs.
In a separate bowl, whisk together the milk, egg, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the blackberries.
Transfer the dough onto a floured surface and pat it into a circle about 1-inch thick. Use a biscuit cutter to cut out rounds of dough and place them on the prepared baking sheet.
Bake for 15-18 minutes, or until the scones are golden brown and cooked through. Remove from the oven and let cool slightly.
While the scones are cooling, make the blackberry whipped cream. In a mixing bowl, whip the heavy cream until soft peaks form. Add the powdered sugar and lemon zest, and continue to whip until stiff peaks form.
Serve the scones warm with a dollop of blackberry whipped cream on top.
