Bourbon Poached Pear Panna Cotta ๐โจ

4 ripe pears, peeled and cored
1 cup bourbon
1/2 cup granulated sugar
2 cups heavy cream
1 cup whole milk
1 vanilla bean, split lengthwise and seeds scraped
2 teaspoons gelatin powder
2 tablespoons cold water

In a saucepan, combine bourbon and sugar over medium heat. Stir until the sugar dissolves. Add the peeled and cored pears and simmer for 20-25 minutes until tender. Remove pears from the syrup and set aside.
In another saucepan, heat the heavy cream, milk, vanilla bean, and scraped seeds over medium-low heat until it starts to simmer. Remove from heat and let it steep for 15 minutes.
In a small bowl, sprinkle gelatin over cold water and let it bloom for 5 minutes.
Remove the vanilla bean from the cream mixture and reheat the mixture until warm. Add the bloomed gelatin and stir until dissolved.
Pour the cream mixture into individual serving glasses or molds, filling them halfway. Chill in the refrigerator for 30 minutes until slightly set.
Carefully place a bourbon-poached pear into each glass, gently pressing it into the partially set cream mixture. Return to the refrigerator and chill for another 2-3 hours until fully set.
Serve the bourbon-poached pear panna cotta chilled, garnished with additional bourbon syrup if desired.
