1 cup all-purpose flour
1/4 cup granulated sugar
1/4 ounce (1 packet) active dry yeast
1/4 cup warm water
2 tablespoons unsalted butter, melted
1 large egg
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1/4 cup brewed coffee, cooled
Vegetable oil, for frying
Powdered sugar, for dusting

In a small bowl, dissolve the yeast in warm water and let it sit for 5 minutes until foamy.
In a large mixing bowl, combine the flour, sugar, melted butter, egg, vanilla extract, salt, and brewed coffee.
Add the activated yeast mixture to the bowl and stir until a soft dough forms.
Transfer the dough to a lightly floured surface and knead for about 5 minutes until smooth and elastic.
Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for 1-2 hours or until doubled in size.
Punch down the risen dough and divide it into small portions, shaping each into a ball.
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
Carefully place the dough balls into the hot oil, frying in batches for 2-3 minutes per side until golden brown and cooked through.
Remove the fried bombolinis from the oil using a slotted spoon and drain on paper towels.
Dust the warm bombolinis generously with powdered sugar before serving.
