Chocolate Caramel Crunch Ice Cream Bars ๐ซ๐ฆ

2 cups chocolate sandwich cookies, crushed
1/4 cup unsalted butter, melted
1/2 gallon vanilla ice cream, softened
1 cup caramel sauce, plus extra for drizzling
1 cup salted peanuts, chopped
2 cups semisweet chocolate chips
1/4 cup coconut oil

In a bowl, combine the crushed chocolate cookies and melted butter. Press the mixture into the bottom of a 9x13-inch baking dish to form a crust. Freeze for 10 minutes.
Spread the softened vanilla ice cream evenly over the crust. Drizzle the caramel sauce over the ice cream and sprinkle with chopped peanuts. Freeze for 2 hours, or until firm.
In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring until smooth and melted.
Pour the melted chocolate over the frozen ice cream layer, spreading it evenly with a spatula. Freeze for another 2 hours, or until completely firm.
When ready to serve, let the bars sit at room temperature for a few minutes to soften slightly. Drizzle with additional caramel sauce, if desired, and cut into squares or bars. Enjoy!
