1 cup unsalted butter, softened
2/3 cup granulated sugar
2 large egg yolks
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
1/2 cup mango jam
1/4 cup spicy hibiscus sugar (plus extra for rolling)

In a large bowl, cream together the butter and sugar until light and fluffy.
Beat in the egg yolks and vanilla until well combined.
Gradually add the flour and salt, mixing until a dough forms.
Wrap the dough in plastic wrap and chill in the refrigerator for at least 1 hour.
Preheat oven to 350Β°F (175Β°C) and line baking sheets with parchment paper.
Roll the chilled dough into 1-inch balls, then roll each ball in the spicy hibiscus sugar to coat.
Place the coated balls onto the prepared baking sheets, spacing them about 2 inches apart.
Using your thumb or the back of a spoon, make an indentation in the center of each cookie.
Fill each indentation with about 1/2 teaspoon of mango jam.
Bake for 10-12 minutes, or until the edges are lightly golden.
Allow the cookies to cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
