1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
3 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Zest of 3 limes
1 cup unsalted butter, softened
1 3/4 cups granulated sugar
4 large eggs, room temperature
1/4 cup key lime juice
1 cup buttermilk
1 tsp vanilla extract
Green food coloring (optional)

Preheat the oven to 350Β°F (175Β°C). Grease and flour three 8-inch round cake pans.
In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of each cake pan.
In another bowl, whisk together flour, baking powder, baking soda, salt, and lime zest.
In a large mixing bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
Stir in key lime juice and vanilla extract.
Gradually add flour mixture alternately with buttermilk, beginning and ending with flour mixture. Mix until just combined. Add green food coloring, if desired, and mix until evenly distributed.
Divide the batter evenly among the prepared cake pans.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Remove from the oven and let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.
