3 packages unflavored gelatin
1 cup ice cold water, divided
12 ounces granulated sugar
1 cup light corn syrup
1/4 teaspoon salt
1 teaspoon vanilla extract
1/4 cup powdered sugar
1/4 cup cornstarch

In the bowl of a stand mixer, combine gelatin and 1/2 cup of cold water. Let it sit while you prepare the sugar syrup.
In a saucepan, combine granulated sugar, corn syrup, salt, and remaining 1/2 cup of water. Cook over medium heat, stirring occasionally until the sugar dissolves. Then, raise the heat to high and cook until the syrup reaches 240Β°F (115Β°C) on a candy thermometer. Remove from heat immediately.
Turn the mixer on low speed and slowly pour the sugar syrup into the gelatin mixture. Once added, increase the speed to high and whip until the mixture becomes very thick, about 12-15 minutes. Add vanilla extract during the last minute of whipping.
While the mixture is whipping, prepare the pan. Combine powdered sugar and cornstarch in a small bowl. Lightly grease a 9x13-inch baking dish and dust with the powdered sugar mixture, ensuring the bottom and sides are well coated.
Pour the marshmallow mixture into the prepared pan and smooth the top with a spatula. Dust the top with more powdered sugar mixture.
Let the marshmallows sit uncovered for at least 4 hours or overnight to set.
Once set, remove the marshmallows from the pan and cut into squares using a sharp knife.
Toss the cut marshmallows in the remaining powdered sugar mixture to coat all sides.
Store in an airtight container at room temperature for up to 2 weeks.
