_____Ingredients:_____
2 cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, softened
2 large eggs
1 cup buttermilk
1 teaspoon vanilla extract
1 1/2 cups fresh strawberries, chopped
For the frosting:
1/2 cup unsalted butter, softened
3 cups powdered sugar
1 teaspoon vanilla extract
2-3 tablespoons milk
_____Directions:_____
Preheat the oven to 350Β°F (175Β°C). Grease and flour a 9-inch round cake pan.
In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
Add the softened butter to the dry ingredients and mix until the mixture resembles coarse crumbs.
In a separate bowl, whisk together the eggs, buttermilk, and vanilla extract.
Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
Gently fold in the chopped strawberries.
Pour the batter into the prepared cake pan and smooth the top with a spatula.
Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Remove the cake from the oven and allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
While the cake is cooling, prepare the frosting. In a mixing bowl, beat together the softened butter, powdered sugar, and vanilla extract until smooth. Gradually add the milk, a tablespoon at a time, until the frosting reaches a spreadable consistency.
Once the cake has cooled completely, frost the top and sides with the prepared frosting. Decorate with fresh strawberries if desired.
