Assorted fruits (such as strawberries, grapes, and kiwi)
1 cup granulated sugar
1/2 cup water
Wooden skewers

Wash and dry the fruits thoroughly. If using strawberries, remove the stems and leaves.
Insert a wooden skewer into each fruit, leaving enough space at the bottom for handling.
In a small saucepan, combine the granulated sugar and water. Heat over medium-high heat, stirring occasionally, until the sugar has completely dissolved.
Once the sugar has dissolved, reduce the heat to medium-low and simmer the syrup for 5-7 minutes, or until it reaches a temperature of 300Β°F (150Β°C) on a candy thermometer. The syrup should thicken and turn golden brown.
Working quickly, dip each skewered fruit into the hot syrup, ensuring it is evenly coated. Hold the skewer over the saucepan for a few seconds to allow any excess syrup to drip off.
Place the coated fruit skewers on a parchment-lined baking sheet to cool and harden.
Once the syrup has set, serve the tanghulu immediately or store in an airtight container for up to 1-2 days.
