1 cup strawberries, hulled and sliced
2 tablespoons granulated sugar
1 cup cream cheese, softened
1/2 cup Greek yogurt
1/4 cup honey
1 teaspoon vanilla extract
1/2 cup graham cracker crumbs
1/4 cup milk
1 tablespoon lemon juice

In a blender, combine the sliced strawberries and granulated sugar. Blend until smooth. Set aside.
In a mixing bowl, beat the softened cream cheese until smooth. Add Greek yogurt, honey, and vanilla extract. Mix until well combined.
In a separate bowl, combine graham cracker crumbs and milk. Stir until the mixture resembles wet sand.
Fill ice pop molds halfway with the cream cheese mixture. Add a spoonful of the strawberry puree on top. Use a skewer or knife to swirl the puree into the cream cheese mixture.
Sprinkle graham cracker crumbs over the strawberry layer. Top with more cream cheese mixture, followed by another layer of strawberry puree. Swirl again to create a marbled effect.
Insert ice pop sticks into the molds and freeze for at least 4 hours, or until completely set.
Before serving, run the molds under warm water for a few seconds to loosen the ice pops. Serve immediately and enjoy!
