Ingredients
- 1 cup ricotta cheese
- 1/2 cup honey
- 3 large eggs
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- Zest of 1 lemon
- 1/2 cup all-purpose flour
- 1/4 teaspoon baking powder
- Pinch of salt
- Powdered sugar, for dusting
- Fresh berries, for serving
Directions
- Preheat the oven to 350°F (175°C). Grease a 9-inch round baking dish.
- In a large mixing bowl, whisk together the ricotta cheese, honey, eggs, olive oil, lemon juice, and lemon zest until smooth.
- In a separate bowl, sift together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, whisking until well combined and smooth.
- Pour the batter into the prepared baking dish and spread it out evenly.
- Bake in the preheated oven for 35-40 minutes, or until the pie is set and golden brown on top.
- Remove from the oven and let cool in the dish for 10 minutes.
- Dust the top of the pie with powdered sugar and serve warm or at room temperature with fresh berries.
