Berry Tiramisu Trifle π«πβ¨

Ingredients
For the tiramisu:
- 1 pound ladyfinger cookies
- 1 cup brewed espresso, cooled
- 1/4 cup coffee liqueur (optional)
- 16 oz mascarpone cheese, softened
- 1 cup powdered sugar
- 2 cups heavy cream
- 1 teaspoon vanilla extract
For the berry layer:
- 4 cups mixed berries (strawberries, raspberries, blueberries, blackberries)
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- Zest of 1 lemon
For garnish:
- Fresh mint leaves
- Additional mixed berries
Directions
- In a mixing bowl, combine the mixed berries with granulated sugar, lemon juice, and lemon zest. Stir gently to coat the berries evenly, then set aside.
- In another mixing bowl, whisk together mascarpone cheese and powdered sugar until smooth and creamy.
- In a separate bowl, whip the heavy cream with vanilla extract until stiff peaks form.
- Gently fold the whipped cream into the mascarpone mixture until well combined.
- In a shallow dish, combine brewed espresso with coffee liqueur (if using).
- Dip each ladyfinger cookie into the espresso mixture, coating both sides lightly. Arrange a layer of soaked ladyfingers at the bottom of a trifle dish.
- Spread half of the mascarpone cream mixture over the layer of ladyfingers.
- Arrange half of the macerated berries on top of the mascarpone cream layer.
- Repeat the layers with remaining ingredients, ending with a layer of mascarpone cream on top.
- Cover the trifle dish with plastic wrap and refrigerate for at least 4 hours or overnight to allow the flavors to meld together.
- Before serving, garnish the tiramisu trifle with fresh mint leaves and additional mixed berries.
