Mini Caramel S'mores cupcakes ๐๐ฐ

Ingredients
- 1 cup graham cracker crumbs
- 4 tablespoons unsalted butter, melted
- 1/4 cup granulated sugar
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup light brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup mini marshmallows
- 1/4 cup caramel sauce
- 1/4 cup chocolate chips
Directions
- Preheat your oven to 350ยฐF (175ยฐC). Grease a mini muffin tin or line with paper liners.
- In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press about 1 tablespoon of the mixture into the bottom of each muffin cup.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla extract and beat until smooth.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Place about 1 tablespoon of the cookie dough on top of each graham cracker crust in the muffin tin.
- Bake for 8-10 minutes, or until the edges are golden brown.
- Remove from the oven and immediately press 3-4 mini marshmallows into the center of each cake. Drizzle with caramel sauce and sprinkle with chocolate chips.
- Allow the cakes to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
