Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 1/4 cups granulated sugar
  • 3 large eggs, room temperature
  • 1 tablespoon vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup whole milk
  • 1 1/2 cups fresh raspberries
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh raspberries, for garnish

Directions

  • Preheat the oven to 350Β°F (175Β°C). Grease and flour two 9-inch round cake pans.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream and milk, beginning and ending with the dry ingredients. Mix until just combined.
  • Gently fold in the fresh raspberries.
  • Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.
  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  • Remove the cakes from the oven and let them cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  • To make the cream cheese frosting, beat together the softened cream cheese and butter until smooth and creamy.
  • Gradually add the powdered sugar, mixing until smooth. Stir in the vanilla extract.
  • Once the cakes are completely cool, frost the top of one cake layer with a generous amount of cream cheese frosting. Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
  • Garnish with fresh raspberries before serving.
