_____Ingredients:_____
1 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup sour cream
1/4 cup milk
3-4 kiwis, peeled and diced (for batter)
1 cup powdered sugar
1/4 cup unsalted butter, softened
2-3 kiwis, peeled and diced (for frosting)
_____Directions:_____
Preheat the oven to 350Β°F (175Β°C). Line a muffin tin with cupcake liners.
In a medium mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
In a separate large mixing bowl, beat the softened butter and granulated sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream and milk, beginning and ending with the dry ingredients. Mix until just combined.
Gently fold in the diced kiwis.
Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full.
Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
Remove the cupcakes from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
To make the frosting, beat the softened butter until creamy. Gradually add the powdered sugar, mixing until smooth.
Fold in the diced kiwis until evenly distributed.
Once the cupcakes are completely cool, frost them with the kiwi frosting.
