Strawberry Tiramisu πβ¨

For the Tiramisu:
1 pound fresh strawberries, hulled and sliced
1/4 cup granulated sugar
1 tablespoon lemon juice
1 cup heavy cream
1/2 cup powdered sugar
8 oz mascarpone cheese, softened
1 teaspoon vanilla extract
1/4 cup brewed coffee, cooled
2 tablespoons coffee liqueur (optional)
24 ladyfinger cookies
For Garnish:
Fresh mint leaves
Cocoa powder, for dusting

Prepare the Strawberry Mixture:
In a mixing bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Stir gently to coat the strawberries in sugar. Let them sit at room temperature for about 15-20 minutes to macerate.
Make the Mascarpone Cream:
In a separate mixing bowl, whip the heavy cream until soft peaks form.
Add the powdered sugar, softened mascarpone cheese, and vanilla extract to the whipped cream. Beat until smooth and creamy.
Assemble the Tiramisu:
In a shallow dish, mix the brewed coffee and coffee liqueur (if using).
Dip each ladyfinger cookie briefly into the coffee mixture, making sure not to soak them too much.
Arrange a layer of dipped ladyfingers at the bottom of a serving dish or individual glasses.
Spread a layer of the mascarpone cream over the ladyfingers, followed by a layer of macerated strawberries.
Repeat the layers, ending with a final layer of mascarpone cream on top.
Cover and refrigerate the tiramisu for at least 4 hours, or overnight, to allow the flavors to meld and the dessert to set.
Garnish and Serve:
Before serving, garnish the tiramisu with fresh mint leaves and a dusting of cocoa powder.
Serve chilled and enjoy!
