_____Ingredients:_____
For the chocolate mascarpone mixture:
2 cups heavy cream
8 oz mascarpone cheese
1/2 cup granulated sugar
1/4 cup unsweetened cocoa powder
1 teaspoon vanilla extract
For the coffee-soaked ladyfingers:
1 1/2 cups brewed coffee, cooled
3 tablespoons coffee liqueur (optional)
24 ladyfinger cookies
For the assembly:
1 cup semisweet chocolate chips
1 cup heavy cream
Cocoa powder, for dusting
_____Directions:_____
In a large mixing bowl, combine the heavy cream, mascarpone cheese, sugar, cocoa powder, and vanilla extract. Beat with a hand mixer or stand mixer until stiff peaks form. Set aside.
In a shallow dish, whisk together the brewed coffee and coffee liqueur, if using. Quickly dip each ladyfinger into the coffee mixture, making sure not to soak them too long, as they will become soggy.
Arrange a layer of soaked ladyfingers in the bottom of a 9x13-inch baking dish, breaking them if necessary to fit.
Spread half of the chocolate mascarpone mixture evenly over the ladyfingers.
Repeat the layers with the remaining soaked ladyfingers and chocolate mascarpone mixture.
In a small saucepan, heat the heavy cream until it begins to simmer. Remove from heat and pour over the semisweet chocolate chips. Let sit for 1-2 minutes, then whisk until smooth and glossy.
Pour the chocolate ganache over the top layer of the tiramisu, spreading it evenly with a spatula.
Cover and refrigerate the tiramisu for at least 4 hours, or overnight, to allow the flavors to meld and the dessert to set.
Before serving, dust the top of the tiramisu with cocoa powder for garnish.
