White Chocolate Raspberry Pistachio Tiramisu ππ°

300 grams raspberries
2 tablespoons sugar
500 grams mascarpone cheese
150 grams white chocolate
150 milliliters double cream
100 milliliters milk
1 teaspoon vanilla extract
150 grams pistachios, shelled and roughly chopped
200 grams sponge fingers

In a bowl, mix the raspberries with the sugar and set aside to macerate.
In a separate bowl, beat the mascarpone cheese until smooth.
Melt the white chocolate in a heatproof bowl over a pan of simmering water, then let it cool slightly.
In another bowl, whip the double cream until soft peaks form.
Fold the whipped cream into the mascarpone cheese, then fold in the melted white chocolate, milk, and vanilla extract.
Dip the sponge fingers in the raspberry juice and arrange a layer of them in the bottom of a serving dish.
Spoon half of the mascarpone mixture over the sponge fingers, then scatter half of the macerated raspberries and chopped pistachios on top.
Repeat the layers with the remaining ingredients, finishing with a layer of mascarpone mixture.
Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to set.
Before serving, sprinkle some extra chopped pistachios on top for garnish.
