Hand-Pulled Soy Sauce Chicken
Hand-Pulled Soy Sauce Chicken
Ingredients:
- 6-8 chicken drumsticks
- 1/2 cup soy sauce
- 1/4 cup water
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 1 piece of ginger, minced
- 2-3 green onions, cut in 2 inches length
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch (optional, for thickening)
- Sesame seeds and sliced green onions for garnish
Instructions:
- Rinse the chicken drumsticks under cold water and pat them dry with paper towels.
- In a bowl, mix together the soy sauce, water, brown sugar, minced garlic and ginger, and chopped green onions. Add a teaspoon of sesame oil for extra flavor. This mixture will be your marinade.
- Place the chicken drumsticks in a zip-top plastic bag or a shallow dish and pour the marinade over them. Seal the bag (or cover the dish with plastic wrap) and refrigerate for at least 30 minutes. For best results, marinate for a few hours or overnight.
- Remove the chicken from the refrigerator and place it in the rice cooker. Pour the marinade over the chicken. Close the rice cooker lid.
- Set your rice cooker to the "Cook" or "Regular" setting and start the cooking process. The chicken will simmer and cook in the soy sauce mixture. It may take around 20-25 minutes, depending on your rice cooker.
- If you want to thicken the sauce, mix a teaspoon of cornstarch with a little water to make a slurry. Open the rice cooker lid and add the slurry to the sauce. Stir well and allow it to cook for a few more minutes until the sauce thickens.
- Once the chicken is cooked through and the sauce is to your liking, remove the drumsticks from the rice cooker. Hand pull chicken meat off the bone and pour sauce on the top. Garnished with sesame seeds and additional sliced green onions if desired.
