Braised Pork Trotters
Braised Pork Trotters
Ingredients:
- 2 pounds of pork trotters (already cut)
- 1 tablespoon of salt
- 3 large slices of ginger
- 3 pieces of scallions
- 2 tablespoons of cooking wine
- 1 tablespoon of oil
- 3 tablespoons of sugar
- 2 cups of hot water
- 1 tablespoon of soy sauce
- 1 tablespoon of oyster sauce
- 1 tablespoon of cooking wine
- 1 teaspoon of dark soy sauce
- 1 teaspoon of white pepper powder
- 4 star anises
- 1 tablespoon of peppercorns
- 1 cinnamon stick
- 4 bay leaves
- 3 slices of ginger
- 3 cloves of garlic
Instructions:
- Begin by soaking the 2 pounds of pork trotters (already cut) in cold water with 1 tablespoon of salt for 30 minutes.
- After soaking, drain the pork trotters and place them in a large pot. Add 3 large slices of ginger, 3 pieces of scallions, and 2 tablespoons of cooking wine. Boil the pork trotters in hot water for 10 minutes.
- Once boiled, rinse the pork trotters with cold water and set them aside.
- In a cooking pot, heat 1 tablespoon of oil over low heat. Add 3 tablespoons of sugar and continue to stir until the sugar melts and turns a red color. Make sure to keep the heat low and avoid over-burning the sugar.
- Add the boiled pork trotters and stir-fry for a few minutes.
- Pour in 2 cups of hot water, then add 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of cooking wine, 1 teaspoon of dark soy sauce, 1 teaspoon of white pepper powder, 4 star anises, 1 tablespoon of peppercorns, 1 cinnamon stick, 4 bay leaves, 3 slices of ginger, and 3 cloves of garlic.
- Allow the mixture to simmer for 1 hour and 30 minutes. Remember to check and turn the pork trotters over every 20 minutes during this simmering period.
- Once the pork trotters are tender and the flavors are well-developed, remove them from the heat and let them cool for 10 minutes before serving.
