Roasted Garlic-Ginger Chicken Thighs

Ingredients:

  • 6 chicken thighs with skin and bone
  • 2 tablespoons minced garlic
  • 2 tablespoons minced ginger
  • 2 tablespoons rosemary
  • 1/2 cup diced red onion

Marinade:

  • 3 tablespoons soy sauce
  • 1 tablespoon cooking wine
  • 1 tablespoon sugar
  • 1 tablespoon black pepper

Instructions:

  • Begin by preparing the chicken thighs. Ensure they have skin and bone intact.
  • Dice 2 tablespoons each of minced garlic, minced ginger, and rosemary. Additionally, finely chop 1/2 cup of red onion. Set aside.
  • In a mixing bowl, combine 3 tablespoons of soy sauce, 1 tablespoon of cooking wine, 1 tablespoon of sugar, and 1 tablespoon of black pepper to create the flavorful marinade.
  • Place the chicken thighs into the bowl along with the minced garlic, ginger, rosemary, and diced red onion. Allow the chicken to marinate for a few hours, preferably overnight, to enhance the flavors.
  • Preheat the oven to 385˚F.
  • Arrange the marinated chicken thighs in a baking dish, ensuring an even distribution of the garlic, ginger, rosemary, and red onion.
  • Bake the chicken in the preheated oven for 40 minutes.
  • Once baked, carefully remove the chicken from the oven and let it rest for 10 minutes before serving.
