Ingredients:
- 1 pound salmon fillet with skin
- Salt and pepper to taste
- 2-3 tablespoons cornstarch
- Oil for frying
Instructions:
- Cut the salmon into three individual portions, ensuring the skin is kept intact. Make shallow diagonal cuts on each side without piercing through the skin.
- Sprinkle salt and pepper evenly over the salmon pieces.
- Lightly coat the salmon with cornstarch, ensuring an even coating on all sides.
- Heat a pot of oil over medium heat until it's hot but not smoking.
- Carefully place the salmon pieces into the oil, skin side down.
- Fry until the skin becomes crispy and golden brown, approximately 3-4 minutes per side. Adjust the time as needed, ensuring the salmon is cooked through and the exterior is crispy.
- Once the salmon is beautifully crispy, remove it from the oil and place it on a paper towel to absorb excess oil.
- Serve the crispy salmon immediately, garnishing with fresh herbs or a squeeze of lemon if desired.
