Orange Chicken 橙汁雞
Ingredients:
- 2 boneless, skinless chicken breasts, cut into large bite-sized pieces
- 1/2 cup of orange juice
- 1 tsp of salt, divided
- 1 cup of all-purpose flour
- 1 cup of cornstarch
- 2 eggs
- 1 Tbsp of vegetable oil
- Oil for deep frying
- Chopped scallions for garnish
For the Orange Sauce:
- 1 cup of fresh orange juice
- 1/4 cup of soy sauce
- 1 tsp of sesame oil
- 1/2 cup of sugar
- 1 tsp of chili pepper (adjust to your spice preference)
- 1/4 cup of rice vinegar
- 1 tsp of garlic powder
- 1 tsp of minced ginger
- 1 tsp of orange zest
- 2-3 Tbsp of water mixed with 1-2 tsp of cornstarch (for thickening)
Instructions:
- In a large bowl, marinate the chicken pieces with 1/2 cup of orange juice and 1/2 tsp of salt for about an hour.
- In a separate bowl, prepare the coating mixture by combining 1 cup of flour, 1 cup of cornstarch, 2 eggs, 1 tsp of salt, and 1 Tbsp of vegetable oil. Adjust the thickness of the coating by adding more cornstarch if needed.
- Heat oil in a pot to medium heat for deep frying.
- Dredge the marinated chicken pieces in the flour mixture, making sure each piece is well-coated.
- Carefully place the coated chicken pieces into the hot oil, frying them until they turn golden brown. The cooking time will vary depending on the thickness, but it's usually around 3-5 minutes. Avoid overcrowding the pot to prevent the pieces from sticking together.
- Once the chicken is golden brown, remove it from the oil and set it aside for 2 minutes.
- After 2 minutes, return the chicken to the hot oil and deep fry for an additional 2 minutes until it's perfectly crispy. Once done, set the chicken aside.
- In a separate pan, combine the ingredients for the orange sauce: 1 cup of fresh orange juice, 1/4 cup of soy sauce, 1 tsp of sesame oil, 1/2 cup of sugar, 1 tsp of chili pepper, 1/4 cup of rice vinegar, 1 tsp of garlic powder, 1 tsp of minced ginger, and 1 tsp of orange zest.
- Heat the orange sauce over medium heat.
- Mix the 2-3 tablespoons of water with 1-2 teaspoons of cornstarch to create a slurry for thickening the sauce.
- Add the cornstarch slurry to the simmering orange sauce and stir until it thickens to your desired consistency.
- Add the fried chicken pieces into the orange sauce, ensuring they are well-coated with the flavorful sauce.
- Sprinkle chopped scallions over the dish for garnish, and your delicious homemade orange chicken is ready to serve.
