Soy Sauce Chicken (Modified Version)
Ingredients:
- 5 chicken thighs
- 2 slices of ginger
- A couple of scallions
- 3/4 cup soy sauce
- 1/4 cup dark soy sauce
- 3/4 cup sugar
- 5 cups chicken broth (saved from step 1)
- 3 star anises
- 3 slices of ginger
- Cornstarch mixed with water (for thickening)
- Ice water
Instructions:
- In a large pot, bring 5 cups of water to a boil. Add 2 slices of ginger, a couple of scallions, and 5 chicken thighs. Boil for 5 minutes.
- Remove the chicken thighs from the pot and immediately place them into a bowl of ice water. Allow them to sit in the ice water for 10 minutes. This helps to lock in the flavor and keep the meat tender.
- Set the chicken broth aside for future use.
- In a medium heat cooking pot, combine soy sauce, dark soy sauce, sugar, chicken broth (saved from step 1), star anises, and gingers. Stir to mix the ingredients.
- Heat the sauce over medium heat until it starts to simmer. Once simmering, add the chicken thighs and continue to cook over medium heat for 15 minutes.
- Turn off the heat and let the chicken sit in the pot for 20-25 minutes. This allows the chicken to absorb the flavors of the sauce.
- Remove the chicken from the pot and cut it into serving pieces. Set the chicken aside.
- Use a fine sieve or strainer to filter out all the ingredients from the sauce, leaving you with a smooth liquid. Return the sauce to the pot.
- In a separate bowl, mix some cornstarch with water to create a thickening slurry. Gradually add this slurry to the sauce in the pot while stirring continuously until the sauce thickens to your desired consistency.
- Pour the thickened sauce over the chicken pieces, ensuring they are well coated.
- Your Homemade Soy Sauce Chicken is now ready to be served.
