Braised Pork Stir-Fry with Baby Bok Choy Recipe
Ingredients:
- 1 pound of pork shoulder
- 3 large slices of ginger
- 3 scallions
- 1 cup of cooking wine
- 8 shiitake mushrooms
- 6 cups of baby bok choy
- 1 tablespoon of oil
- 1 tablespoon of sliced garlic
- 1 tablespoon of oyster sauce
- 1 cup of chicken broth
- 1 teaspoon of sesame oil
- Cornstarch mixed with water (for thickening)
Instructions:
- Place pork shoulder into a large pot of water.
- Add 3 large slices of ginger, 3 scallions, and 1 cup of cooking wine to the pot. Simmer for approximately one hour.
- Remove the cooked pork from the pot and allow it to cool. Once cooled, cut the pork into large slices and set them aside.
- Soak 8 shiitake mushrooms in water until they become soft. Slice the mushrooms and set them aside.
- Cut 6 cups of baby bok choy into halves and set them aside.
- Heat a cooking pan over medium heat with 1 tablespoon of oil and add 1 tablespoon of sliced garlic.
- Add the sliced shiitake mushrooms and stir-fry for about a minute, then add the cut pork.
- Continue to cook until the pork is slightly browned, then remove it from the pan.
- In the same cooking pan, add 1 tablespoon of oil, then add the cut baby bok choy. Stir-fry for about a minute.
- Add 1 tablespoon of oyster sauce, 1 tablespoon of cooking wine, and 1 cup of chicken broth to the pan. Mix these well with the vegetables.
- Return the cooked pork and mushrooms to the pan with the baby bok choy. Stir and cook for a couple of minutes.
- To thicken the sauce, add a mixture of cornstarch and water, and finish with 1 teaspoon of sesame oil.
