Braised Pork Stir-Fry with Baby Bok Choy Recipe

Ingredients:

  • 1 pound of pork shoulder
  • 3 large slices of ginger
  • 3 scallions
  • 1 cup of cooking wine
  • 8 shiitake mushrooms
  • 6 cups of baby bok choy
  • 1 tablespoon of oil
  • 1 tablespoon of sliced garlic
  • 1 tablespoon of oyster sauce
  • 1 cup of chicken broth
  • 1 teaspoon of sesame oil
  • Cornstarch mixed with water (for thickening)

Instructions:

  • Place pork shoulder into a large pot of water.
  • Add 3 large slices of ginger, 3 scallions, and 1 cup of cooking wine to the pot. Simmer for approximately one hour.
  • Remove the cooked pork from the pot and allow it to cool. Once cooled, cut the pork into large slices and set them aside.
  • Soak 8 shiitake mushrooms in water until they become soft. Slice the mushrooms and set them aside.
  • Cut 6 cups of baby bok choy into halves and set them aside.
  • Heat a cooking pan over medium heat with 1 tablespoon of oil and add 1 tablespoon of sliced garlic.
  • Add the sliced shiitake mushrooms and stir-fry for about a minute, then add the cut pork.
  • Continue to cook until the pork is slightly browned, then remove it from the pan.
  • In the same cooking pan, add 1 tablespoon of oil, then add the cut baby bok choy. Stir-fry for about a minute.
  • Add 1 tablespoon of oyster sauce, 1 tablespoon of cooking wine, and 1 cup of chicken broth to the pan. Mix these well with the vegetables.
  • Return the cooked pork and mushrooms to the pan with the baby bok choy. Stir and cook for a couple of minutes.
  • To thicken the sauce, add a mixture of cornstarch and water, and finish with 1 teaspoon of sesame oil.
