Scallion Beef Stir-Fry (蔥爆牛肉)
Marinade:
- 8 oz sirloin beef, thinly sliced
- 1 Tbsp soy sauce
- 1 tsp sugar
- 1/2 tsp white pepper powder
- 1 Tbsp cornstarch, mixed with 1 Tbsp water
- 1 Tbsp oil
Stir-Fry:
- * Marinated beef
- 2 cups scallions, sliced into strips
- 2 cups yellow onions, sliced into strips
- 1 cup red onions, sliced into strips
- 1 cup jalapeño pepper, sliced into strips
- 1 Tbsp minced garlic
- 2 Tbsp oil (divided)
- 1 tsp black pepper
- 1 tsp sesame oil
- 1 Tbsp soy sauce
- 1 tsp sugar
Instructions:
- Begin by slicing the sirloin beef into thin strips.
- In a mixing bowl, combine soy sauce, sugar, white pepper powder, cornstarch mixed with water, and 1 tablespoon of oil. Mix until the marinade is well blended.
- Add the sliced beef to the marinade and ensure that the meat is evenly coated. Allow it to marinate for several hours to enhance the flavor.
- Heat a pan over medium heat with 1 tablespoon of oil and minced garlic.
- Add the marinated beef to the pan and stir-fry until the beef slices are lightly browned, typically taking about 3-4 minutes. Remove the beef from the pan and set it aside.
- Increase the heat to high and add 1 teaspoon of oil to the pan. Then, add the sliced scallions, red and yellow onions, and jalapeño pepper. Stir-fry until the onions and peppers are slightly browned.
- Reintroduce the cooked beef to the pan and blend in soy sauce, sugar, and black pepper. Continue stirring and cook for an additional 30 seconds to meld the flavors.
