Braised Beef Chuck

Ingredients:

  • 2.5 pounds of beef chuck, cut into large pieces
  • 1 tablespoon of cooking oil
  • 1 cup of chopped yellow onion
  • 1 can (14 ounces) of diced tomatoes
  • 4 large slices of ginger
  • 2 star anises
  • 2 bay leaves
  • 1 cinnamon stick
  • 1 tablespoon of whole peppercorns
  • 1 cup of beef broth
  • 2 cups of water
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper

Instructions:

  • Cut the beef chuck into large pieces (at least an inch thickness)
  • In a large cooking pan, heat it over medium heat without adding any oil. Pan sear the beef pieces until they turn brown on all sides. Once done, set them aside.
  • In a medium-sized cooking pot, heat 1 tablespoon of cooking oil over medium heat.
  • Add the chopped yellow onion to the pot and cook until the onion turns brown.
  • Stir in the can of diced tomatoes and cook for a few minutes until the mixture is fragrant and the tomatoes have softened, and place the seared beef pieces into the pot.
  • Add the ginger slices, star anise pods, bay leaves, cinnamon stick, and whole peppercorns to the pot. Stir everything together.
  • Pour in the beef broth and water, ensuring that the ingredients are well combined.
  • Season the mixture with 1 teaspoon of salt and 1 teaspoon of black pepper. Adjust the seasonings to taste, if needed.
  • Reduce the heat to low. Stir to ensure they are submerged in the liquid.
  • Cover the pot and let it simmer on low heat for 2 hours, allowing the flavors to meld and the beef to become tender.
  • Once the braised beef chuck is done, it is ready to serve.
