Stir-Fried Shrimp in Clear Sauce (Gluten-Free)
Ingredients:
- 1 pound of peeled and deveined shrimp
- Salt and pepper to taste
- 2 tablespoons of olive oil
- 2.5 cups of water
- A few slices of ginger
- 2 green onions
- 2 bay leaves
- 3 star anise
- 1 teaspoon of salt
- 1 tablespoon of olive oil
- 1 bunch of baby bok choy
- 1/4 cup of the clear sauce (prepared in step 2)
- 1 teaspoon of sesame oil
- Arrowroot starch mixed with water to thicken the sauce
Instructions:
- Start by peeling and deveining the shrimp.
- Season the shrimp with salt, pepper, and olive oil. Set aside.
- In a saucepan, add 2.5 cups of water along with the slices of ginger, green onions, bay leaves, and star anise.
- Simmer the mixture for 30 minutes, allowing the flavors to meld. After simmering, strain out all the solid ingredients, leaving you with a clear sauce.
- Place the baby bok choy in a steamer. Season with 1 teaspoon of salt and 1 tablespoon of olive oil.
- Steam for approximately 1 minute or until the bok choy is tender.
- Heat a medium-sized pan over medium heat and add 2 tablespoons of olive oil.
- Once the oil is hot, add the seasoned shrimp and cook for about 1-2 minutes, just until they start to turn pink.
- Pour 1/4 cup of the clear sauce (prepared in step 2) into the pan with the shrimp.
- Add a mixture of Arrowroot starch and water to thicken the sauce to your desired consistency. Stir well to combine.
- Drizzle 1 teaspoon of sesame oil over the shrimp.
- Place the cooked shrimp on top of the steamed baby bok choy.
- Serve immediately, and enjoy your gluten-free stir-fried shrimp in clear sauce!
