Scallion Oil Noodles (Simplified Version)

Ingredients:


For the Noodles:

  • Fresh Chinese egg noodles or your preferred noodles

For the Scallion Oil Sauce:

  • 2 tablespoons olive oil
  • 2-3 stalks of scallions, finely chopped
  • 2-3 cloves garlic, minced
  • 1 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon red vinegar
  • 1 teaspoon sesame oil

Instructions:

  • Cook the fresh Chinese egg noodles according to the package instructions. If you're using dried noodles, cook them until they are al dente. Drain and set aside.
  • In a bowl, combine the minced garlic, chopped scallion.
  • Heat the olive oil in a small saucepan over medium heat. You want the oil to be hot but not smoking.
  • Pour the hot oil into the bowl. Mix well with garlic and scallions.
  • Add soy sauce, oyster sauce, red vinegar, sesame oil, then mix well.
  • Place the cooked noodles in serving bowls. Toss the noodles and sauce together before eating to evenly coat the noodles with the flavorful sauce.
  • Feel free to customize this dish by adding your favorite toppings, such as wonton, sliced meat, sliced cucumbers, blanched vegetables, or even a soft-boiled egg. It's a versatile and tasty dish that you can easily make at home.
