Steamed Salmon salad with Kale

Ingredients:

  • 200 grams of fresh salmon fillet
  • 2 cups of kale, washed and roughly chopped
  • 1 tablespoon of olive oil
  • 1 teaspoon of lemon juice
  • Salt and pepper to taste
  • 5 olives
  • Optional: 1/4 cup of diced yellow bell pepper for added color and crunch

Instructions:

  1. Prep the Salmon:

    • Start by patting the salmon dry with paper towels.
    • Season both sides with salt and pepper to taste if you like
    • Instant POT
    • Put inside the pot the steamer basket, a glass of water and the salmon.
      Close the lid and set up the instant pot as LOW, 4 minutes and 10 minutes in natural release.
    • Traditional Coocking Pot on the Hob

    • Fill the bottom of a steamer pot with one glass of water on the bottom and bring to a simmer over medium heat.
    • Place the salmon in the steamer basket and cover.
    • Steam the salmon for about 8-10 minutes, or until it flakes easily with a fork. The cooking time might vary depending on the thickness of the fillet.

  2. Prepare the Kale:

    • While the salmon is steaming, heat the olive oil in a pan over medium heat.
    • Add the washed chopped kale and sauté until it's wilted and tender, about 3-5 minutes. Season with salt and pepper to taste.
    • If using, add the diced yellow bell pepper to the kale during the last minute of cooking.

  3. Combine and Dress:

    • Transfer the cooked kale to your container.
    • Once the salmon is done, let it cool slightly, then flake it with a fork and place it on top of the kale in the container.
    • Drizzle the lemon juice over the top of the salmon and kale.
    • As last option add some olives on the container

  4. Pack for the Workplace:

    • Seal the container with a tight-fitting lid. If you're prepping this meal in advance, keep it refrigerated and enjoy it within 2 days for the best flavor and freshness.
    • Before serving, give your salad a good mix to spread the lemon juice and olive oil evenly.

  5. Enjoy!:

    • When lunchtime comes around, you can enjoy this salad cold straight out of the container, or let it sit at room temperature for a bit if you prefer.

This steamed salmon and kale salad is not only healthy but also light and easy to carry, making it perfect for a workplace lunch.
