Asian Cucumber Salad
Start with 5-6 Persian cucumber and spiral cut them. Add about 1 1/2 tbsps of salt in between the slices and let set for about 15-20 minutes before rinsing with cold water. Pat dry with a paper towel and add 1 tbsp minced garlic, 1/3 cup sliced onions, 1/4 sliced green onions if you have it, 1 tbsp soy sauce, 2 tbsp rice vinegar, 2 tbsp gochugaru aka Korean pepper powder ( add 1 tbsp if you want it less spicy) 1 tbsp brown sugar and 1 tbsp sesame seeds. Mix and eat immediately. The longer it sits the more soggy it will become
