Lasagna

you can add:

  • ham
  • aubegines
  • mushrooms

Ingredients:

Lasagna noodles (pre-cooked or no-boil type)
300 ml of marinara sauce or your preferred tomato sauce
150 grams of mozzarella cheese, shredded
100 grams of grated Parmesan cheese
Olive oil
Salt and pepper to taste
Extra virgin olive
Optional: you can add ham and mushroom like my version in photo
Optional: grilled aubegine perfect for the summer version

PS: this version does not have besciamella because it make the pasta ligher for the workplace and feeling ready for the afternoon working time.
Avoiding the besciamella means also that you do not need to rewarm the lasagna in a microwave. Perfect if you do not like to use the microwave and also if you do not have access to it.


Instructions:

Layer the Lasagna:

In your oven-safe Pyrex lunch box or container, spread a thin layer of marinara sauce on the bottom.
Place a layer of lasagna noodles over the sauce.
Add a layer of ham and some mushroom slices, then a layer of ham, followed by a layer of sautéed mushrooms.
Sprinkle a layer of mozzarella and a little Parmesan over the mushrooms.
Repeat the layers, finishing with a layer of noodles topped with sauce and the remaining cheeses.

Cook or Store:

If you’re going to cook the lasagna immediately, place it in the preheated oven and bake for 25-30 minutes or until the cheese is melted and the edges are bubbly.
If you’re preparing this for work, make sure the layers are cool before assembling. Seal the Pyrex container with its lid after assembling and refrigerate if making it the night before.

Reheat at Work:

If your workplace has an oven, you can cook or reheat the lasagna there. Remove the lid and place the Pyrex container in a preheated oven according to your workplace kitchen’s settings, usually around 180°C (350°F), for about 20-30 minutes or until heated through and the cheese is bubbly.
Serve:

Once cooked or reheated, let the lasagna rest for a few minutes before serving. It will be hot and the flavors will have time to settle, making it easier to cut.
