Chicken Udon Noodle Soup
Ingredients:
- 4 pieces of shiitake mushrooms
- 1/2 chicken
- 3 large slices of ginger
- 1/2 yellow onion
- Salt, to taste
- 1 package of udon noodles
- Chopped scallions for garnish
Instructions:
- Begin by soaking the shiitake mushrooms in water until they become soft. Once softened, remove the stems.
- In an Instant Pot, place the half chicken and fill it halfway with water. Add the soaked shiitake mushrooms, ginger slices, and yellow onion.
- Set the Instant Pot to the "Soup" setting and adjust the cook time to 1.5 hours.
- Once the cooking is complete, carefully remove the chicken from the pot and discard the skin and bones. Use your hands to pull the chicken into small, bite-sized pieces.
- Strain the broth through a sieve or strainer to remove any solids, resulting in a clear broth. Season the broth with salt according to your taste preferences.
- Pre-cook the package of udon noodles according to the instructions on the package. Drain the noodles and place them in individual soup bowls.
- To assemble the soup, add the shredded chicken and soaked shiitake mushrooms to the bowls of udon noodles. Pour the clear broth over the noodles and chicken.
- Finally, sprinkle chopped scallions on top of each bowl for added flavor and garnish.
