Steamed Ginger Chicken with Shiitake Mushrooms (蒸香菇薑絲雞)
Marinated Ingredients:
- 3 chicken legs, cut into small pieces
- 1 tablespoon soy sauce
- 1 tablespoon cooking wine
- 1 teaspoon ginger powder
- 1 teaspoon salt
- Pinch of white pepper powder
- 1 tablespoon cornstarch
- 1 tablespoon oil
Cooking Ingredients:
- 3 shiitake mushrooms, soaked until soft, stems removed, and diagonally sliced
- 3 large pieces of ginger, cut into thin strips
- 2 scallions, cut into small pieces
Instructions:
- In a bowl, marinate the chicken pieces with soy sauce, ginger powder, salt, cooking wine, white pepper powder, cornstarch, and oil. Mix well to coat the chicken evenly. Let it marinate for about an hour.
- While the chicken is marinating, soak the shiitake mushrooms in water until they become soft. Remove the stems and cut the mushrooms into slices. Set them aside.
- Cut the ginger into thin strips and set it aside.
- Cut the scallions into small pieces and set them aside.
- Once the chicken is done marinating, place it in a steamer along with the shiitake mushrooms and the ginger.
- Steam the chicken over medium-high heat for about 14-16 minutes, or until it is fully cooked. Once done, turn off the heat and let it sit in the steamer for an additional 3 minutes to allow the flavors to meld.
- Carefully remove the steamed chicken from the steamer and place it on a serving plate.
- Sprinkle the cut scallions over the chicken, and it's now ready to be served.
