Char Siu and Shrimp Noodle Soup (叉燒蝦球湯麵)

Noodle soup recipe:
Ingredients:

  • 10 oz medium-sized shrimp, peeled and deveined
  • 2 packages dried egg noodles
  • 4 cups chicken broth
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 cup shiitake mushrooms (soak in water until turn soft, and remove stem)
  • 2 cups lettuce
  • 2 scallions, sliced for garnish

Instructions:

  • Cook the egg noodles according to the package instructions. Drain and set aside.
  • In a large pot, heat the vegetable oil over medium heat. Add the minced garlic, grated ginger and shiitake mushrooms, and sauté for a minute until fragrant.
  • Pour in the chicken broth, 1 tablespoon soy sauce, and 1 tablespoon fish sauce. Bring the soup to a simmer.
  • Add the shrimp to the simmering broth and cook for about 2-3 minutes, or until the shrimp turn pink and are fully cooked.
  • Stir in the lettuce and cook for an additional 1-2 minutes until they wilt.
  • Remove the pot from the heat and stir in the sesame oil.
  • To serve, divide the cooked noodles among bowls and ladle the hot shrimp and vegetable soup over the noodles, then place the cut Char Siu on the top.
  • Garnish with sliced green onions.
