Char Siu and Shrimp Noodle Soup (叉燒蝦球湯麵)

Noodle soup recipe:
Ingredients:
- 10 oz medium-sized shrimp, peeled and deveined
- 2 packages dried egg noodles
- 4 cups chicken broth
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 1 cup shiitake mushrooms (soak in water until turn soft, and remove stem)
- 2 cups lettuce
- 2 scallions, sliced for garnish
Instructions:
- Cook the egg noodles according to the package instructions. Drain and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the minced garlic, grated ginger and shiitake mushrooms, and sauté for a minute until fragrant.
- Pour in the chicken broth, 1 tablespoon soy sauce, and 1 tablespoon fish sauce. Bring the soup to a simmer.
- Add the shrimp to the simmering broth and cook for about 2-3 minutes, or until the shrimp turn pink and are fully cooked.
- Stir in the lettuce and cook for an additional 1-2 minutes until they wilt.
- Remove the pot from the heat and stir in the sesame oil.
- To serve, divide the cooked noodles among bowls and ladle the hot shrimp and vegetable soup over the noodles, then place the cut Char Siu on the top.
- Garnish with sliced green onions.
