Claypot Shrimp with Cellophane Noodles (姜蒜粉絲蝦煲)
Ingredients:
- 2 packages of cellophane noodles
- 16 headless shrimp, deveined
- 4 cups Napa cabbage, cut into pieces
- 2 tablespoons minced garlic
- 2 tablespoons minced ginger
- 2 fresh red chili peppers, chopped
- 2 tablespoons oil
- 2 tablespoons soy sauce
- 1 cup chicken broth
- Chopped cilantro for garnish
Instructions:
- Begin by soaking the cellophane noodles in water until they become soft. Drain and set aside.
- Devein the shrimp, leaving them headless. Set the shrimp aside.
- Cut the Napa cabbage into pieces and set it aside as well.
- In a bowl, mix together the minced garlic, minced ginger, and chopped fresh red chili peppers.
- Heat 2 tablespoons of oil in a pan or wok. Pour the hot oil into the bowl with the garlic, ginger, and chili mixture. Add 2 tablespoons of soy sauce to the bowl and stir everything together.
- Take a claypot and lay the cut Napa cabbage at the bottom. Place the soaked cellophane noodles on top of the cabbage.
- Arrange the shrimp on top of the noodles, and then pour the ginger garlic sauce over the shrimp.
- Add 1 cup of chicken broth to the claypot.
- Place the claypot over medium heat until it reaches a boil. Cook for approximately 3 minutes.
- Once cooked, sprinkle some chopped cilantro on top for garnish.
