Stir-Fry Pork with Potatoes (薯仔炒肉片)

Marinade Ingredients:

  • 8 oz pork sirloin, sliced
  • 1 Tbsp soy sauce
  • Pinch of white pepper powder
  • 1 Tbsp cornstarch
  • 1 Tbsp oil

Cooking Ingredients:

  • 4 large potatoes, cut into strips
  • 1 carrot, cut into strips
  • 3 scallions, cut into 2-inch pieces
  • 1 Tbsp oil
  • 1 Tbsp minced garlic
  • 1 Tbsp soy sauce
  • 1 Tbsp oyster sauce
  • 1 Tbsp cooking wine
  • 1 tsp sugar
  • 1 cup chicken broth
  • 1 tsp sesame oil

Instructions:

  • In a bowl, combine the sliced pork, soy sauce, white pepper powder, cornstarch, and oil. Mix well and marinate for a few hours.
  • In the meantime, prepare the vegetables by cutting the potatoes and carrot into strips. Set them aside. Also, cut the scallions into 2-inch pieces and set them aside separately.
  • Heat a cooking pan over medium heat and add 1 tablespoon of oil. Add the minced garlic and sauté until fragrant.
  • Add the marinated pork to the pan and stir-fry for a few minutes until it turns slightly brown.
  • Add the cut potatoes and carrot to the pan and mix well with the pork.
  • Pour in 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of cooking wine, 1 teaspoon of sugar, and 1 cup of chicken broth. Stir everything together.
  • Continue cooking until the potatoes turn soft, which usually takes around 5-7 minutes.
  • Increase the heat to high to reduce the sauce. Once the sauce has thickened, add the cut scallions and 1 teaspoon of sesame oil. Mix everything well.
