Shredded Pork Pan-Fried Noodles (肉絲炒麵)
Marinated Pork Ingredients:
- 8 oz pork, cut into strips
- 1 tablespoon soy sauce
- 1 tablespoon cooking wine
- 1 teaspoon white pepper powder
- 1 tablespoon cornstarch
- 1 tablespoon oil
Other Ingredients:
- 2 shiitake mushrooms, soaked in water until soft, stems removed and cut into strips
- 2 cups bean sprouts, washed and rinsed
- 3 scallions, cut into 2-inch strips
- Egg noodles, boiled until soft and rinsed dry
- 1/2 cup oil (for cooking noodles)
- 2 tablespoons oil (for stir-frying)
- 1 tablespoon minced garlic
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1.5 cups chicken broth
- Cornstarch mixed with water (for thickening)
- 1 teaspoon sesame oil
Instructions:
- In a bowl, combine the pork strips with soy sauce, cooking wine, white pepper powder, cornstarch, and oil. Mix well to ensure all the pork pieces are coated. Marinate for a few hours.
- Meanwhile, soak the shiitake mushrooms in water until soft. Remove the stems and cut the mushrooms into strips. Set aside.
- Wash and rinse the bean sprouts, and set them aside.
- Cut the scallions into 2-inch strips and set aside.
- Boil the egg noodles until soft. Drain the noodles and rinse them with cold water to remove excess starch.
- Heat a cooking pan over medium heat and add half a cup of oil. Place the noodles in the pan without stirring and cook until they become crispy and golden brown on each side. Remove the pan-fried noodles from the pan and drain off any excess oil.
- Transfer the pan-fried noodles to a serving plate.
- In the same pan, heat 2 tablespoons of oil over medium heat. Add the minced garlic and sauté until fragrant.
- Add the marinated pork and shiitake mushrooms to the pan and stir-fry for a few minutes. Then, add the bean sprouts and continue stir-frying.
- Pour in the soy sauce, oyster sauce, and chicken broth. Allow the chicken broth to come to a boil.
- Once the chicken broth is boiling, add the cut scallions to the pan.
- Add the cornstarch mixed with water to the pan to thicken the sauce.
- Stir in the sesame oil for additional flavor.
- Pour the cooked pork and vegetables over the pan-fried noodles on the serving plate.
- The marinated pork and vegetable stir-fry with crispy noodles is now ready to be served. Enjoy!
